Owned and operated by Santa Cruz locals, Matisse and Daniela Selman, the facility is looking for local food manufacturers or people who might be looking to start a food business who need a clean, certified commercial facility in which to produce their products. With their existing commercial kitchen already booked almost to capacity, the Selmans recently acquired and remodeled the large adjoining warehouse space. Living in the organic food capital of the world Santa Cruzans know how spoiled they are. The county hosts at least seven farmers markets weekly, where produce picked the previous day is de rigueur, and where fresh gourmet products are offered by local chef-artisans who create them. Just as the cottage food industry has taken off locally, some of the makers of those gourmet products are seeing their business grow exponentially. Their home kitchens can no longer accommodate them. Enter Extra Kitchen, a commercial kitchen and culinary incubator near the Sash Mill. Extra Kitchen offers prep and cooking space as well as dedicated storage area for its tenants, most of whom rent in pre-arranged monthly blocks of time. Hourly rental slots are also available. “We are really excited to be able to expand our facilities and offerings to the burgeoning food industry in Santa Cruz,” says Matisse, a chef himself who trained at the classic Culinary Institute in New York. “The satisfaction of our tenants is our most important asset,” notes Chef Matisse, who offers his knowledge and expertise to his tenants. “If needed we give advice on food costing, ingredient sourcing and can even provide contacts for certain retailers.” Extra Kitchen already is host to thirteen food entrepreneurs, including a mustard maker, a chocolatier, an almond spread maker, producers of fresh Asian food, including sushi, makers of organic muesli, a cookie baker, and others. With the additional space available, there is room for more than doubling the current number of renters. Chef Matisse describes their operation, “We are a wholesale food production kitchen with five separate kitchen production areas, including induction cooktops, convection ovens, and a Type Two hood. With our newly-acquired space, we now have many more prime time hours available. We have room for refrigerators and pallet racks of storage. We have shipping docks, and forklifts are available if needed.” Extra Kitchen offers free tours of its facility by appointment and welcomes inquires from interested parties.
